One of the highlights of my career was helping to open Rezdora, one of the best Italian restaurants in the world, where I learned what it truly means to craft authentic Italian dishes. My fascination with Italy’s culinary traditions led me to travel extensively throughout the country, culminating in specialized training in Bologna. There, I mastered the delicate art of rolling sfoglia at the Vecca Scuola Bolognese under the guidance of Maestra Spisni—an experience that changed the way I approach pasta and Italian cooking.

One of the defining moments in my culinary journey was my specialized training in Bologna, Italy, where I had the privilege of learning the art of rolling pasta with the Nonna's at La Vecchia Scuola Bolognese. For months, I immersed myself in Italy's rich culinary traditions, refining my skills under the guidance of the renowned Maestra Spisni. This hands-on experience deepened my understanding of pasta-making and truly transformed the way I approach Italian cooking, blending technique with heartfelt tradition.
